Like most coffee from Guji and throughout Ethiopia, this lot is the result of the collective effort of numerous smallholding farmers, rather than one or two large plantations. Farmers typically deliver their harvest to the nearest local processing mill, in this case Siko Washing Station, a mill located in Siko village in the Guji zone of Uraga District. This washed process coffee brings clean, tropical & vibrant cup qualities. Coffee cherries are depulped on the same day they’re received, left to ferment in open air rands for 8 - 12 hours, then washed to remove the mucilage. Finally they are dried on raised beds for 5 - 15 days, depending on weather.
